chickadee Posted February 20, 2009 Share Posted February 20, 2009 OK guys, I've never made this recipe but saw it in something that I need to throw out and decided I wanted to save the recipe and here is as good a place as any:wink2: Polenta, Cheese and Corn Muffins 1 cup plain flour 3 tpsns baking powder 1/2 cup polenta 1/4 cup caster sugar 1 cup grated cheese 50g butter, melted 1 egg, lightly beaten 1 x 125g can creamed corn 1/2 cup plain yoghurt 2 Tblspns chopped parsley Sift flour and baking powder into a large mixing bowl, stir through polenta, sugar and cheese. Combine the remaining ingredients and fold through flour and cheese mixture. Spoon mixture into greased mini muffi pans. Bake in a moderately hot oven at 190degrees C for 10-15 mins, or until golden brown. Makes 20. Note: Polenta is also known as yellow cornmeal. iadoremika Posted February 22, 2009 Share Posted February 22, 2009 ~Cheesy Caesar Chicken Sandwich~ Ingredients 6 slices of bread (from crusty bread loaf) 2 tablespoons of caesar dressing 2 boneless, skinless BBQed chicken breasts (diced into thin, bite sized pieces) 2 slices of jalapeno Havarti cheese Instructions Toast slices of bread, in glass baking dish, in a preheated oven for a couple minutes (or until slightly golden brown). Take out of oven. Evenly spread a little caesar dressing on each slice of toasted bread. Heat up chicken peices and evenly distribute onto bread. Place a slice of Havarti cheese onto each slice of bread. Place glass dish (with now prepared sandwiches) back into preheated oven and continue toasting until Havarti cheese is melted. Take out of oven. Place on plate. Eat and enjoy! Also note... Watch bread when toasting in oven because you don't want it to burn. Try out different breads and/ or cheeses: pumpernickel bread, mozarella cheese etc. Serves 3 to 6 people. Depending on how hungry everyone is. You can also make it for more or less people, just adjust the amount of each ingredient accordingly. You can also substitute diced chicken breasts for thinly sliced (smoked/ roasted...whatever) turkey or chicken luncheon meats. It's OKAY, but not as good. iadoremika Posted March 2, 2009 Share Posted March 2, 2009 (edited) ~Homemade Hashbrown Tortilla~ Ingredients 2 small potatoes, diced into tiny (homemade hashbrown sized) pieces 2-3 whole eggs, beaten until frothy Half a medium sized onion, diced 1 to 2 cloves of garlic, sliced Approx. 2 tablespoons of extra virgin olive oil 2 to 3 generous pinches of your favourite seasong(s) A pinch each of salt and pepper 1 spring onion, sliced 1 small handful of grated cheese (of your choice) Instructions In a skillet, heat 1 tablespoon of the olive oil and sautee onions until golden brown, soft and sweet. Add potatoes and cook until potatoes easily allow a fork through them. Season with salt and pepper. Add garlic (and more olive oil, if needed) and sautee until garlic gets sweet. Add the pinches of seasoning, stir and continue sauteeing. Move everything into the middle of the skillet (in a pile), pour egg on top. Keep moving everything around, so as egg does not burn. Sprinkle cheese on top and continue until cheese melts. Remove from heat and onto plate. Add spring onions on top. Enjoy! Also note... This is made for one hungry person, or two side dishes. But you can adjust the recipe to make more or less, depending on your needs. Would be great for breakfest, dinner or even a snack. To make it more of a "meal", you can add chicken and/ or vegetables etc. You can add hot sauce for some extra heat! Oh I couldn't resist...lol Perfect Guacamole Recipe Ingredients 2 ripe avocados ½ red onion, minced (about 1/2 cup) 1-2 serrano chiles, stems and seeds removed, minced 2 tablespoons cilantro leaves, finely chopped 1 tablespoon of fresh lime or lemon juice 1/2 teaspoon coarse salt A dash of freshly grated black pepper 1/2 ripe tomato, seeds and pulp removed, chopped Garnish with red radishes or jicama. Serve with tortilla chips. Method 1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.) 2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours. Keep the tomatoes separate until ready to serve. Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste. 3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready. 4 Just before serving, add the chopped tomato to the guacamole and mix. Serves 2-4. Variations For a very quick "guac" just take a 1/4 cup of salsa and mix it in with your mashed avocados. You don't need to have tomatoes in your guacamole. To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. Watermelon with Balsamic and Feta Ingredients 1/4 cup good-quality balsamic vinegar 1 tablespoon sugar 8 (roughly 4 by 2-inch) pieces seedless watermelon 4 ounces feta cheese, crumbled 2 tablespoons shredded mint leaves Directions In a small saucepan, whisk together the balsamic vinegar and sugar. Cook over medium heat until reduced by half and syrupy, about 4 minutes. Stack 2 pieces of watermelon on each plate and drizzle with the balsamic reduction. For best results, make the salad without ever refrigerating the tomatoes but with the watermelon cold from the refrigerator. The contrast of temperatures will give the salad an extra fresh taste. Ingredients 2 tablespoons balsamic vinegar 1 tablespoon fresh lemon juice 1/2 cup extra-virgin olive oil 2 beefsteak (or other large variety) tomatoes, stemmed, washed and dried 1 pint cherry tomatoes, stemmed, washed and dried 1 tablespoon chopped tarragon leaves 4 strawberries, hulled, washed and cut into very small pieces Maldon sea salt Freshly ground black pepper 1 to 2 teaspoons superfine (or granulated) sugar 6 ounces cold watermelon, rind removed, seeded and cut into bite-size cubes In a bowl, whisk together the balsamic, lemon juice, and olive oil. Taste for seasoning. Set aside. Place the tomatoes on a flat surface. Cut the smaller ones in half and the larger ones into slices. Arrange all of them in a single layer, flesh side up. Season them with salt, black pepper and sugar. Drizzle the tomatoes with the dressing. Toss them with the tarragon and strawberries. Arrange the tomatoes down the length of 6 rectangular plates. PROCESS frozen watermelon and next 3 ingredients in a blender until smooth, stopping to scrape down sides. Add enough ice to bring mixture to 5-cup level; process until smooth. iadoremika Posted April 27, 2009 Share Posted April 27, 2009 Positvely Palatable Popcorn Things needed: 1 bag of popcorn 2-3 tablespoons of butter or margarine 2-3 generous pinches of seasonings (I like hot chili flakes, Caribbean seasoning, garlic powder etc) Small saucepan Spoon Bowl (for popcorn) Instructions: Pop the bag of popcorn and set aside. On medium-low heat on a stovetop, place butter in the small saucepan and still with spoon until completely melted. Turn heat down to low, and add seasonings. Stir until evenly combined. Pour half of the popcorn into a bowl and with the spoon, evenly distribute half of the seasoned butter. Repeat for second half of popcorn and butter. ENJOY! Tnx to Ninho and Cibele from the Brasilian Thread! 1 soup spoon of butter 1 tin condensed milk (???spell) 3 to 5 soup spoons of Cadbury powder chocolate Put all ingredients in a pan and stirr it up in soft heat until it does not get glued to the pan. As soon as it gets cold, make small balls and roll it either on sugar or granulated chocolate bits, like the pic... Put in small paper trays. Enjoy!! I'm bumping this thread and quoting myself because i lost the recipe and need it...lol And adding to the recipe...
