We know Mika is good at cooking. :mikadas:

He already has cooked in many TV show as a guest star.

Finally in March 2020, Mika launches his own show on INSTAGRAM.

Cooking with Mika : episode 3

See you tomorrow eve (Thursday at 7pm France/Italy time 6pm UK time) for another session of #cookingwithmika This time however I am announcing the ingredients for one of the dishes we are going to make so that you can join in in real time at home. This dish is an homage to my Lebanese roots. Its super simple and has not tooo many ingredients. I just hope you have these ingredients at home or are able to go out and buy them although it is still recommended to stay home as much as possible. If you can’t find tahini during this tricky time, don't worry. You can always watch and take note for when it will be possible to go out shopping. There will be a lot more music and talking than cooking anyway! I will be joined by a couple friends including the Michelin starred chef Viviana Varese in Milan. INGREDIENTS BELOW!

  • 3 large aubergines
  • 50 gr or 4 teaspoons of tahini
  • 3 garlic cloves
  • 1 lemon
  • Extra virgin olive oil
  • A few mint leaves
  • To decorate - some sesame seeds, pomegranate seeds if you can find
  • them and mint

Però questa volta vi dirò in anticipo gli ingredienti di uno dei piatti che cucineremo, così potete cucinare da casa anche voi. E’ una ricetta tributo alle mie radici libanesi. E’ super semplice e ha pochi ingredienti. I spero solo che li abbiate a casa o che possiate procurarveli, anche se resta sempre raccomandato di rimanere a casa il più possibile. e non trovate la tahini in questi tempi complicati, non preoccupatevi. Potete sempre prendere nota per quando sarà possibile uscire.
Comunque ci saranno molta più musica e molte più chiacchiere che cucina! Si collegheranno anche un paio di miei amici, compresa la chef stellata Michelin Viviana Varese di Milano. MI ha dato lei l’idea di fare questo!

 

ED ECCO GLI INGREDIENTI

  • 3 grandi melanzane
  • 50 gr o 4 cucchiaini di tahini
  • 3 spicchi d’aglio
  • 1 limone
  • Olio extra vergine do oliva
  • qualche foglia di menta
  • Per decorare: semi di sesamo o melograno, se li trovate

Nasu dengaku

Grilled aubergine is dressed with sweet miso sauce and served with a fresh and fiery noodle salad in this Japanese-inspired dish from Simon Rimmer

 

recipe

Serves 4
Ingredients

  • 2 aubergines, halved lengthways
  • 1 tsp sesame oil
  • 1 tbsp mirin
  • 1 tbsp sake
  • 2 tbsp miso
  • 3 tbsp caster sugar

 

For the salad

  • 200g cooked thin rice noodles
  • 1 tbsp cashew nuts, roasted
  • 12 radishes, sliced
  • 8 spring onions, sliced
  • Handful of beansprouts
  • Handful each of chopped coriander, mint, basil

 

For the salad dressing

  • 2 cloves garlic
  • Stems from 2 bunches of coriander
  • 6 small green chillies
  • 1 tbsp palm sugar
  • 3 shallots, finely chopped
  • Juice of 3 limes
  • Pinch of salt
  • 2 sticks of lemongrass


Method

  1. Brush the aubergines with sesame oil, season and grill for about 5 minutes until soft.
  2. In a saucepan boil the mirin and sake for 3 minutes. Reduce the heat, add the miso and sugar, and simmer for a further 5 minutes until thickened.
  3. Brush the sauce onto the aubergines and grill for another 2 minutes.
  4. Blend all the salad dressing ingredients together until smooth then toss with the salad ingredients.
  5. Divide the salad between serving plates and serve half an aubergine on top of each.
